WHere is an easy version of a drink featured on a new drinks list. Designed as a large-volume pre-mixed which is bursting with the flavours associated with Christmas time, making it perfect for your celebration. Reserve the remaining cordial to use in breakfast cocktails, sweets, or to mix another batch of this cocktail.
The Bikini Cocktail
Makes enough for 10 people
For the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Drink (makes 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Method
For the Cordial: Place every items in a pan, bring to a light boil, stirring to dissolve. After that, remove from the burner and leave to reach room temperature entirely. Transfer into a sealable bottle, seal keeping it in the fridge, where it will keep for up to a month.
To make Batch Mix: Mix every liquid ingredients into a large bottle, let it rest for one hour, then pass it through preferably using cheesecloth, making it fully clarified.
When ready to serve: Add 85ml from the premix to a stirring glass filled with ice, gently stirring lightly for a minute to cool it down. Pour into an cold coupe glass or equivalent, decorate with the cranberries adding the final touch by giving it a quick spritz of mandarin oil over the top.
